COVER FEATURE: Building Healthier Beverages
Making a healthier beverage in 2000 was easy -- you added vitamin C, maybe a dose of calcium, and you were done. In 2005, all you needed was green tea or a squirt of pomegranate. As we look toward the second decade of the 21 st century, there's a whole lot more science and technology going into making better-for-you liquid refreshments. Still hot are superfruits, especially blended with more familiar, antioxidant-heavy flavors (think acai-blueberry), hydration and the replenishment of electrolytes, and vitamin fortification. And we’re seeing drinks with protein and other ingredients for satiety, fiber and full-day servings of fruits and vegetables.
INGREDIENTS: Matching the right fiber to the application
Fiber is no longer just fiber. Some fiber flows, some fiber dissolves and some fiber crunches. We’ll discuss how to choose the right fiber for your application, look at some novel applications of fiber and examine some companies that had to switch from one fiber to another.
