Whether it’s called eco-friendly, zero-carbon footprint or environmental sustainability, going green has been a huge imperative for food processors this year. We’ll look at what several leading-edge processors are doing to clean up their acts and how those efforts are yielding both marketing points and savings in energy and other costs.
Formulation: Improving texture
A number of suppliers at the recent IFT show rolled out ingredients to improve the textural qualities of food products. Such sensory attributes increasingly are being looked at as a means of improving or differentiating products, and texture terms are attractive descriptors on packages. As one supplier puts is: “Texture changes everything.”
Ingredients for healthy indulgence
The attention paid to health and obesity needn't take the joy out of eating. Even health-conscious consumers need to indulge. The trick is to remove the guilt with ingredients that make indulgence a health boost as well as a taste explosion.
LEED certification: Learn from Hormel’s experience
This has been a big year for food plants to go green, and the most recognizable certification has been the LEED (Leadership in Energy and Environmental Design) designation by the U.S. Green Building Council. In an exclusive collaboration with Hormel Foods, we follow the meat and food products marketer from groundbreaking to ribbon cutting on its new Dubuque, Iowa, plant for shelf-stable microwavable meals and how it kept the project LEED certified.
Pest management
In case history fashion, we look at how two food processors improved their pest control programs.
